Old Mrs. Pig's Potato Soup
I really like this potato soup I made. It was really good. And I am going to show you how to make it!
Ingredients:
2 tbps butter
1 onion
3 medium-sized potatoes
2 cups water or chicken broth or 2 cups water with bouillon (what we used)
1 tsp salt
1 rib celery or 1 tsp celery salt (what we used)
2 cups milk
With a sharp knife take the outer skin off the onion. Slice the onion into rings and then cut into quarters. Melt butter in saucepan and cook till onion looks glassy, not brown. Scrib potatoes, peel, cut into 1/2 inch slices then cut into cubes.
Put potatoes in saucepan, add water or broth, salt, celery or celery salt. Cover and cook slowly for 30 minutes, until potatoes are very soft when you test them with the point of a sharp knife.
Remove celery and discard. Leave potatoes in pieces, or like we did, blend the potatoes in a blender or with moulinex. We left some potatoes whole for texture.
Add milk and heat soup but do not let it boil or milk will curdle and separate.
Serves 4 to 6.
We doubled this recipe.

Fun Snack: Peanut butter balls
Today I discovered a really fun snack. It is healthy and made with peanut butter and honey. We used homemade peanut butter and raw honey.
First, take a teaspoonful of peanut butter
Take a butter knife and get out about 1/2 tsp size of honey.
Squish it all together and roll it into a ball.
Enjoy!
